The Water Footprint: The Invisible Cost of Our Consumption

- Green Water Footprint:
This is the volume of rainwater that is stored in the soil and is consumed by plants through evapotranspiration. This type of footprint is crucial in rainfed agriculture and in forest production. Although this water is not extracted from surface or underground sources, its use reduces the amount available for the recharge of aquifers and the maintenance of the hydrological cycle.
- Gray Water Footprint:
This is the volume of freshwater that is needed to assimilate the load of pollutants and return the water to an acceptable quality. In other words, it is the amount of water needed to dilute the pollutants generated in the production process of a good. For example, the water used to dissolve pesticides in a crop or to process waste from a factory. The gray water footprint is an indicator of water pollution, a problem that affects the health of ecosystems and human communities.
Understanding these three components is essential to evaluating the real impact of a product. For example, the carbon footprint of beef is extremely high, but its blue water footprint (irrigation water) is also immense. However, the footprint of a cotton T-shirt, although it does not emit much CO₂, has a very high blue and gray water footprint due to the use of irrigation water and pesticides.
Water Footprint by Product: The Most Surprising Impacts

- Beef: 15,400 liters per 1 kg. This massive figure is due to the water for animal consumption, the water for cleaning, and, above all, the water for irrigating the crops that serve as feed. One kilogram of beef is, in fact, one of the largest water footprints of a food product.
- Coffee: 140 liters per cup. The water is used for the irrigation of the coffee plantations, the harvesting, and the processing of the beans. This value is a clear example that the beverages we consider "simple" have a complex virtual footprint.
- Dairy products: 1,000 liters per 1 kg of milk. The water footprint of milk is mainly due to the water for the crops that feed the cows.
- Cotton T-shirt: 2,700 liters per T-shirt. Cotton production is one of the most water-intensive in the world, requiring massive irrigation and the use of pesticides that contaminate the water.
These examples demonstrate that the decisions we make in the supermarket have a direct and cumulative impact on the global availability of freshwater.
How to Reduce Your Personal Water Footprint
The good news is that reducing your water footprint is one of the simplest and most direct actions you can take for a positive environmental impact. Changes in consumption habits are more effective than direct actions, such as showering for less time.
- Diet changes: The most effective way to reduce your water footprint is to reduce meat consumption. Beef, in particular, has a disproportionately high water footprint. Opting for plant-based proteins, such as lentils, beans, or tofu, can reduce your virtual water consumption by thousands of liters per year.
- Conscious product consumption: Inform yourself about the water footprint of the products you buy. By choosing products with a lower footprint, such as linen clothing instead of cotton, or fair-trade coffee from regions with abundant rainfall, you can reduce your impact.
- Waste reduction: By reducing food and product waste, you also reduce virtual water consumption. Every product you throw in the trash has a water cost that is lost with it.
- Efficient water use at home: Although direct water consumption is a small fraction of your total footprint, it is important to be efficient. Repairing water leaks, installing low-flow faucets, and showering for less time are actions that, although small, add up to a positive impact at a local level.
